Mini Fruit Cakes



Mini Fruit Cakes ... These mini cakes are filled with fruits, nuts and chocolate. You can add or subtract fruits / nuts to suit your taste. Simple to make, yet so delicious!


Mini Fruit Cakes

Makes : 36 mini cakes

Ingredients :
  • 1/3 cup butter, softened
  • 1/3 cup castor sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 1 tsp.  vanilla extract
  • 1 1/3 cup all-purpose flour
  • 3/4 tsp.  baking powder
  • 1/4 tsp.  baking soda
  • 1/4 tsp.  salt
  • 2 tbsp.  milk
  • 1 cup coarsely chopped tutti frutti / glazed cherries / candied fruit
  • 1/4 cup  golden raisins
  • 1/4 cup dried black currants
  • 1/4 cup coarsely chopped almonds
  • 2/3 cups chocolate chunks / chocolate chips ( optional )
  • Extra chocolate, melted for drizzle

Method :
  • Heat oven to 180 C / 350 F. Lightly grease or paper-line mini muffin cups.
  • Beat butter, castor sugar and brown sugar in large bowl until creamy.
  • Beat in egg and vanilla extract until light and fluffy.
  • Stir together flour, baking powder, baking soda and salt in a separate bowl; gradually mix into butter mixture.
  • Add milk; stir until blended. Stir in tutti frutti, raisins, currants, almonds and chocolate chips.
  • Spoon ( 1 heaping tablespoon ) batter into muffin cups.
  • Bake 18 to 20 minutes or until wooden pick inserted in center comes out clean.
  • Cool 5 minutes; remove from pans to wire rack. Cool completely.
  • Drizzle melted chocolate over top of mini cakes, if desired.
