Strawberry Jam Filled Cupcakes



Strawberry Jam Filled Cupcakes ... Who doesn't love a good cupcake? I simply love them, specially when they are filled with some homemade jam. The jam not only enhance the taste of these simple cupcakes, but will give them a great look. Easy to make, these soft & delicious cupcakes are a perfect treat for tea-time.

Strawberry Jam Filled Cupcakes

Makes : 8 cupcakes

Ingredients :
  • 4 oz.  butter, softened
  • 4 oz.  castor sugar
  • 2 eggs
  • 1/2 tsp.  vanilla essence
  • 4 oz.  plain flour
  • 1 tsp.  baking powder
  • 1 - 2 tbsp.  milk, as required
  • Strawberry Jam, as required
  • Icing sugar, for dusting

 Method :
  • Preheat the oven to 180 C. Place cupcake liners in cupcake tin; set aside.
  • Beat the butter and sugar in a large bowl until light and creamy.
  • Add the eggs, one at a time and beat well after each addition.
  • Add the vanilla essence and beat again.
  • Sieve in the flour and baking powder. Gently fold in or beat on low speed until well combined.
  • Add milk, if the mixture is thick & mix well.
  • Fill each cupcake liner with batter.
  • Bake at 180 C for about 14 - 16 minutes or until toothpick inserted in center comes out clean. 
  • Remove from the oven, leave for 5 minutes before transferring to a wire-rack to cool completely.
  • Use a small heart cookie cutter to mark a heart in the top of each cupcake.
  • Using a knife, cut out (1-inch deep ) along the marked heart shape.
  • Pop out the cut centers, and fill the hole with jam or preserves.
  • Dust with Icing sugar for a finishing touch.
Note:
  • Take jam in a bowl, stir with a fork until smooth. Or place the jam in a microwave-safe dish and microwave for 15 seconds to soften.
